Teià (Maresme, Catalonia) - X. Recasens
Today I have visited a small farm holding that produce edible flowers, different germinated and mini vegetables. Nowadays there are boom of gastronomy in Barcelona and Catalonia and the chefs want to innovate their dishes with colours, textures and different flavours.
Borage flowers - X. Recasens
This farm produce a huge variety of flowers to supply the demand of these food. More than 30 spices (Rosmarinus officinalis, Thymus vulgaris, Lavandula sp, Tropaeolum majus,  Eruca vesicaria, Brassica sp, Borrago officinalis, Brassica campestris, Calendula officinalis, Allium sativum, Allium cepa, Beta vulgaris, Raphanus sativus, Vicia faba...) are grown. It is a paradise of agro-biodiversity.


Broccoli flowers - X. Recasens
Flowers are cultivated using natural farming, based by  Masanobu Fukuoka systems.


Mustard, red cabbage and radish germinated - X. Recasens.
I have tasted arugula flowers, broccoli flowers, mustard germinated and red cabbage germinated.
